Vegan Banana Bread

Ingredients:

  • 3 large ripe bananas
  • 1 1/2 cup of whole wheat flour (can use gluten free option)
  • 1 1/2 cup tapioca flour
  • 2 teaspoon baking powder
  • 1 cup coconut sugar
  • 40ml vegetable oil (I used avocado)
  • 1 teaspoon cinnamon
  • 1 teaspoon mixed spice
  • 1/2 cup pitted dates chopped
  • 30ml Water

Method:

  • Preheat oven to 180oC
  • Mix all dry ingredients together
  • Add oil and water
  • In another bowl mash banana in a bowl whisk until light and fluffy
  • Gently fold banana into the flour keeping the air in it
  • Add more water if needed
  • Add dates
  • Put into a loaf pan
  • Bake for 45 min or until golden brown (time will depend on oven)
  • Allow to cool before serving
