Vanessa's Recipe of the Month

Low Carb, Grain Free, Gluten Free Bread

Looking for a low carb, gluten-free, grain free bread recipe? It's hard to say no to just one slice of this moreish bread. It’s loaded with protein, which can help stabilise blood sugar and is needed to build and repair the body!


1 cup (250g) almond butter

¼ cup brown flaxseed,ground

2 tablespoons coconut flour

3 tablespoons psyllium husk

1 teaspoon bicarbonate of soda

1 teaspoon baking powder

½ teaspoon sea salt

5 medium free range eggs

3 tablespoons butter or coconut oil, melted

1 teaspoon maple syrup or 6-8 drops stevia

1 teaspoon apple cider vinegar

Chia or sesame or poppy seeds for dusting the top of the bread


1.Preheat the oven to 175°C, 350°F, gas mark 4.

2.Grease your bread tin or line with parchment.

3.Mix together all the dry ingredients and set aside.

4.In another bowl,beat the eggs, vinegar and maple syrup well. Then add in the almond butter and butter/oil and blend well again.

5.Stir the wet ingredients into the dry ingredients until a smooth batter forms.

6.Scoop the batter into the prepared bread tin and sprinkle the seeds on top.

7.Bake for 35 minutes or until the middle springs back when lightly touched.

8.Remove from the oven and allow to cool before eating.


What's nourishing about this recipe... The almonds not only provide protein, but also provide good anti-inflammatory fats, which help to promote health. They have been shown to lower LDL-cholesterol (the 'bad' cholesterol) and lower risk of heart disease, provide protection against diabetes and may also aid lose weight loss.

Flaxseeds and psyllium husk provide a good source of soluble fibre, which promotes elimination by sweeping waste out of the colon more efficiently. In addition, both are known to have positive effects on cardiovascular health.

Flaxseeds are also a good source of omega-3 essential fatty acids, the ‘good’ fats, which have been shown to benefit our cardiovascular system. Each tablespoon of ground flaxseed contains approximately 1.6 grams of plant omega-3s.
