Antioxidant Brownie Recipe by Leanda

  • 1 cup cooked mashed sweet potato
  • 3 Tablespoons almond butter
  • 2 tablesoon maple syrup or rice malt syrup
  • ¼ cup organic cocoa powder
  • ½ cup goji berries
  • ¼ cup cacoa nibs


  1. Preheat the oven to 200 and grease a small cake pan
  2. Melt almond butter with syrup
  3. In a large bowl add the sweet potato, melted nut butter, syrup, cocoa powder and mix well
  4. Fold in Goji berries and cacao nibs
  5. Pour mixture into greased pan and bake for 20 minutes or until cooked through
  6. Remove from the oven and allow to cool completely before slicing

Store in fridge or freezer
