Vegan Superfood Burgers
Ingredients Makes 6 – 8 patties
- 2 cups cooked mashed sweet potato
- 1 cup cooked brown rice
- ½ cup quinoa flakes
- ½ cup hemp seeds
- 2 tablespoons chia seeds soaked in 2/3 cup water (soaked for 15min )
- 1 teaspoon cumin
- 1 teaspoon turmeric
- 1 teaspoon apple cider vinegar
- 1 tablespoon tamari soy sauce
- ¼ cup chopped coriander and parsley ( any mixed herbs will do )
- Mix all ingredients and make in to patties
- Heat fry pan with coconut oil and cook patties till golden brown
- Serve on your favourite bread roll with mixed salad leaves and pesto
- Alternatively have a bun free burger and enjoy your patties with salad and favourite sauce.
