Coconut Rough Christmas Balls
100g fresh pitted cherries or 100g of dried cherries, roughly chopped
10 dates, pitted, roughly chopped
1 cup almond meal
¼ cup raw cacao powder
¼ cup desiccated coconut +extra ⅓ cup, to coat
4 tbsp sunflower seeds
2 tbsp chia seeds
1 tsp ground cinnamon
Pinch of sea salt
3 tbsp melted coconut oil
Place the cherries, dates, almond meal, cacao powder, coconut, seeds, cinnamon and salt in the bowl of a food processor. Blend briefly until combined. Add coconut oil and pulse 2 to 3 times until well combined.
If the mixture is too wet add some extra coconut or if too dry, add a little water.
Roll the mixture into small balls and place on a tray lined with baking paper.
Place the extra coconut onto a large plate and roll each ball in the coconut, ensuring each ball is evenly coated. Place in the fridge to firm up.
Store balls in an airtight container refrigerate
