Cashew Cookies





1 cup quinoa flour

½ tsp baking powder

⅛ tsp salt

¼ cup coconut sugar

2 whole eggs

¼ cup melted coconut oil

1 cup raw cashews



Preheat the oven to 180deg

Combine the quinoa flour, cashews, baking powder, salt, and coconut sugar in a bowl.Stir in the eggs and coconut oil until combined.These cookies won't really spread, so shape them into a ball and then flatten slightly.Bake on baking paper to prevent them from sticking to the tray.Bake for 10 - 12 minutes until lightly browned. (Check the bottoms, those will brown first!)
