Cashew Cookies

Cashew Cookies

GF, DF

 

 

Ingredients

1 cup quinoa flour

½ tsp baking powder

⅛ tsp salt

¼ cup coconut sugar

2 whole eggs

¼ cup melted coconut oil

1 cup raw cashews

 

Instructions

Preheat the oven to 180deg

Combine the quinoa flour, cashews, baking powder, salt, and coconut sugar in a bowl.Stir in the eggs and coconut oil until combined.These cookies won't really spread, so shape them into a ball and then flatten slightly.Bake on baking paper to prevent them from sticking to the tray.Bake for 10 - 12 minutes until lightly browned. (Check the bottoms, those will brown first!)

Raw Chocolate

Raw Chocolate

 

  • ½ cup raw cocoa butter
  • ½ cup coconut oil
  • 1/3 cup raw cacao powder
  • 2 tablespoons of rice malt syrup
  • Pinch of sea salt

 

Method

  1. Slightly melt the cocoa butter, stir till smooth
  2. Remove from heat
  3. Add other ingredients together in a mixing bowl
  4. Pour in melted butter and mix well

*You can add other flavours here like, Coconut flaked, vanilla bean, goji berries, blueberries, coffee bean,

  1. Pour into molds or a plate lined with kitchen paper
  2. Freeze until hard
  3. Must store in fridge or freezer

Green Goodness Bowl

 

Raw, Vegan, rich in B vitamins and good fats

  • 1 cup raw zucchini noodles
  • 2 cups raw broccoli florets
  • 1 - 2 cups of fresh salad greens
  • 2 tablespoons hemp seeds
  • 2 tablespoons green pesto
  • Lemon
  • Salt
  • Olive oil

 

Method

  1. In a bowl massage broccoli florets with dash of olive oil - dash of lemon -sprinkle salt ( massaging raw vegetables will give them a cooked texture when eating )
  2. Spiralise your zucchini to make noodles
  3. Arrange fresh salad green on plate
  4. Add zucchini noodles then broccoli florets
  5. Top with hemp seeds and pesto
  • TIP Add a little more olive oil to pesto to make it easy to drizzle
